Favourite Meals: Chicken Bacolod on Bacolod Rice

Sunday evening was quite significant to our household because my mother finally decided to share her top-secret recipe of Filipino Chicken Bacolod. Mind you, she would have gladly shared it before. However, Sunday evening was the first time my dad, sister, and I were in the kitchen long enough to (a) watch her make it and (b) jot it all down.

Making Chicken Bacolod was and is surprisingly easy now that mom has figured out the ingredients' exact measurements instead of the usual tancha-tancha. In this case, our featured main was paired with Bacolod rice cooked from the Chicken's drippings. Deeelicious! Life list item: check!
